Signature Drink: Strawberry Shrub Martini

INGREDIENTS
—.5 oz. strawberry shrub*
—1.5 oz. Kettle One Vodka
—1.5 oz. lemon juice
—.5 oz. simple syrup
—3 oz. fever tree soda

FOR STRAWBERRY SHRUB
—2 cups strawberries
—hulled and sliced
—2 cups granulated sugar
—1 cup cider vinegar
—1/2 cup white wine vinegar

DIRECTIONS
Combine fruit and sugar in nonreactive bowl. Stir thoroughly to coat evenly. Allow to rest for 1 hour. Macerate by muddling until all fruit is broken up. Cover and let sit for 24 hours at room temperature. Macerate again as much as possible. Add vinegars and stir well. Cover and store at room temperature for one week, with a good stir each day. Strain through cheesecloth, push for maximum extraction. To make the cocktail, add 1/2 ounce of strawberry shrub to other ingredients and stir.

INGREDIENTS:
» 2 oz. Tito’s Vodka
» .75 oz. fresh lemon juice
» .75 oz. Osmanthus syrup
» club soda
» cucumber slice

DIRECTIONS:
» Build cocktail in mixing glass.
» Pour into a Collins glass and top with club soda.
» Garnish with cucumber slice or slices and serve.
